If you do not want to prepare typical dishes with shrimps, instead of stir-frying or boiling shrimps, why don’t you change into a lighter dish for this weather of autumn?
Let’s try this Salad of Shrimp and White Fungus.
- Tiger Shrimps: 200g
- 1 Cucumber
- 1 White Fungus
- 2 Carrots
- Garlic, chopped
- Chili, sliced
- Roasted sesame, fish sauce, lemon, sugar, herbs
Step 1: Carefully wash tiger shrimps, boil, peel, remove the head, tail and black line of the shrimps.
Step 2: Clean and remove the nut of the cucumber. Slice the cucumber into the bite-sized pieces.
Step 3: Peel and clean the carrots. Slide carrots into fibroblast shape and put into a bowl of water with lemon juice. This will help carrots avoid to be darkened and hard.
Step 4: Chopped and rinse the white fungus with boiled water.
Step 5: Prepare the sauce: 1 teaspoon of fish sauce, 2 coffeespoon of lemon juice, 2-3 coffeespoon of sugar. Mix well and add seasonings depending on your taste, so that the sauce tastes sour, sweet and a little salty simultaneously. Then, add chopped garlic and sliced chilies.
The sauce should be tasted stronger than normally do because the majority of ingredients are vegetables.
Step 6: If the cucumber, carrots and white fungus are drained, add all of them and 1/2 the sauce prepared together into a bowl. Mix well, wait for around 10 minutes, and then remove the water from the mixture. Seasonings the salad for your taste.
Step 7: As soon as preparing for the meal, add the tiger shrimps, roasted sesame and the remaining sauce for well mixing.
Move the mixture to a plate or a bowl, garnish with herbs and now you have the salad.
